Last week I got a little ambitious on the spinach, so it’s been spinach everything! I was a bit nervous about how this combo would turn out, but I was pleasantly surprised!
- 1 sweet potato
- 3 handfuls spinach
- Himalayan sea salt
- 1 tablespoon coconut oil
This was super simple, but delish! Wash your sweet potato and then slice longways thinish slices. Put coconut oil in heated pan and add slices. Cook until browned, flipping slices every so often. Once done, move to the side and add spinach. The spinach will cook down, so feel free to tweak as needed! Place slices on plate and sprinkle sea salt. Add spinach on top and a little extra sea salt for good measure 🤗
I had this as a light dinner, but would also work well as a side. Enjoy!
