Easiest Snack Ever!

I have become obsessed with this simple, delicious snack! You’ve probably seen overnight oats blow up over social media and I totally understand why. Comparable to the CrockPot, it literally takes minutes to put together then you pop it in the fridge to do it’s job!

My friend passed along this recipe {from backtoherroots.com} and it’s the one I’ve been using. There are a ton of ways to mix it up, so feel free to experiment with your favorite add ins – I don’t think you could possibly go wrong!

Basic Recipe Ingredients
Yields 1 large or 2 smaller servings {I double the recipe to have for the week!}

  • 1/3 cup greek yogurt, plain or vanilla
  • 1/2 cup rolled oats
  • 2/3 cup milk of your choice, if using nut milk choose unsweetened
  • 1 tablespoon chia seeds or ground flax {optional, but highly recommended!}
  • 1/2 tsp vanilla extract
  • pinch of salt
  • 0-2 tsp honey or maple syrup {optional}

Directions

  1. Whisk together all ingredients.
  2. Divide into servings in a container with a tight-fitting lid
  3. Place in refrigerator for at least 4 hours. Placing overnight will give best results

How to Mix It UP

  • Chocolate Peanut Butter: add 2 tbsp natural peanut butter and 2 tbsp unsweetened cocoa powder to basic recipe before refrigeration
  • Carrot Cake: add 1 large carrot peeled and shredded, 2 tbsp cream cheese, 1/4 cup raisins, and 1/2 tsp cinnamon to basic recipe before refrigeration
  • Banana Chocolate Chip: add 1/2 mashed banana and 2 tbsp chocolate chips to basic recipe before refrigeration
  • Tropical Fruit: add 1/3 cup chopped pineapple, 1/3 cup chopped mango, 1/2 mashed banana and 2 tbsp flaked coconut to basic recipe before refrigeration
  • Pumpkin Spice: add 1/2 cup pumpkin puree, 1/2 tsp cinnamon, 1/8 tsp cloves and 1/4 tsp nutmeg to basic recipe before refrigeration
